A Quickie…

When I order at restaurants, and like a dish, I always (while eating) try to talk myself through what I’d need to do to replicate the dish at home. Sometimes I do this in my head so no one can hear me, but more often, I talk it out aloud, which elicits plenty of eye rolls from anyone dining with me.  Today’s dish is just like on that I had several years ago at Bugaboo Creek Steakhouse.    It is quick, simple, and for us, it’s made with ingredients we seem to have on hand all the time.  It’s also delicious and easy to pair with a variety of sides.

Cheesy Bacon BBQ Glazed Chicken


  • Boneless skinless chicken breasts – I portion 1 per person if they are large, butterflied (opened up like a book by cutting the breast in half horizontally)…this lets them cook quickly without drying out…have you ever noticed that?  When you grill a whole breast, it takes forever, and by the time it is fully cooked, it is DRY.  Butterflying  your breasts prevents this. You can season these any way you choose…simple salt and pepper, BBQ Seasoning, Cajun, Creole, seasoning salt…you name it, you choose…or you can keep them unseasoned because the sauce, bacon, and cheese will give you a lot of flavor


  • Bacon – 1 lb, cooked – can be kept in whole slices, or crumbled…cook this ahead of time.  Do this, you’ll thank me later.
  • Shredded Sharp Cheddar Cheese – 1-2 T. per portion depending on personal taste
  • Good quality BBQ Sauce…I used Sweet Baby Ray’s Original, and usually do.  It’s the family fave.

The method is SO simple…

First, toss the chicken on a preheated grill – medium high heat, and cook through.

Rule of thumb for cooking any meat on the grill…it’s not ready to be flipped if you have to tear the meat to turn it.  If it’s ready to flip, the meat will release with no effort from the cook.

When the chicken is cooked through, brush with your BBQ sauce.  I brush the first side, then flip it and let the sauce caramelize (brown) for a minute on each side.

Once you’ve flipped the chicken, top with bacon…ahhhh….bacon….

Now top each piece with cheese….bacon AND cheese?!  Heaven…

Now, turn off your grill and close the cover.  There will be enough heat left in the grill to melt the cheese and create delicious perfection.


Simple, delicious, and a crowd pleaser.  Does it get better than this?  Just a quick note…we’ve done all sorts of sides with this dish – macaroni salad, potato salad, oven fries, tossed salad, coleslaw, baked beans, grilled veggies, you name it.  You can even throw the chicken on a great roll and make a sandwich out of this.
