A Quick Dinner…Sloppy Joe Casserole

Tonight, while at my in-laws’ house, I tried a new recipe (in my opinion more of a method) that created a super quick and tasty dinner that was a crowd pleaser.

Even if you think you can’t cook, you can make this.  There are only four ingredients.  Once you’ve tried the original, you can play with ingredients and flavors to get a casserole that suits your tastes.

Here goes…

You’ll need:

2 cans of crescent roll dough

1 can of sloppy joe sauce (like Manwich…or if you’re feeling really creative you can create your own — but that would be more than 4 ingredients)

1 lb. of ground beef (browned)

8 oz. shredded cheddar cheese.

To assemble:

Brown the beef and drain.  Stir sloppy joe sauce into meat. Spray the bottom of a 13×9 baking dish with cooking spray.  Open the first can of crescent roll dough and spread in the bottom of the pan.  Pour meat mixture on top of roll dough.  Spread cheese on top of meat mixture. Open second can of roll dough and place on top of casserole.

Bake at 350 degrees for 25-30 minutes.

That’s it…pair it with your favorite veggie sides and you have a quick, easy and pretty darn delicious meal.

Now…once you’ve tried the original, your head just might start cooking up other flavor combos that use the same basic method…I know I did!

Some ideas…

  • add veggies to the original — peppers, onions, even zucchini to amp up the nutritional value
  • brush roll dough with garlic butter, mix meat with marinara sauce, spread with mozzarella cheese, place second layer of roll dough and brush with more garlic butter
  • use ground chicken and mix with enchilada sauce, layer with pepper jack cheese

I’m sure all of you can come up with some other tasty combinations!  I know I’ll definitely be experimenting!
